Gundruk is Nepal's iconic fermented leafy green – made from radish, mustard, or cauliflower leaves through natural lactic fermentation and sun-drying. Tangy, earthy, and deeply umami. Used in Gundruk ko Jhol (sour soup), achar, and stir-fries. Rich in probiotics, iron, and vitamins. A UNESCO-recognised traditional Nepali food.
